Instruction
Method 1: Pressure Cooker
Add the beans, sofrito, chicken broth, and bay leaves together in your pressure cooker.
Cook on high heat for 30 minutes — let the steam naturally release before opening.
Strain the beans before adding the lime juice.
Garnish with cilantro, serve and enjoy!
Method 2: Stovetop
Soak the black beans overnight in water, drain before cooking.
In a large pot, combine the beans and chicken broth together and bring to a boil.
Cover the beans and reduce to a simmer, add in the bay leaves and sofrito, then allow them to cook until they are tender but firm, approx. 60-90 minutes.
Periodically try to taste test and mash a bean against the side of the pot with a fork.
Once fully cooked, strain off any extra broth before adding the lime juice.
